Ingredients
Peaches:
- 1 1/2 peaches peeled and sliced
- 2 tablespoons coconut oil
- 1 teaspoon white granulated sugar
For the cocktail:
- 4 ounces vodka
- 4 ounces peach schnapps
- 4 ounces heavy whipping cream
- 4 ounces Godiva white chocolate liqueur
- 1 ounce fresh lemon juice
Rim:
- 2 tablespoons yellow/orange sanding sugar
- 1/4 a lemon
Instructions
- Preheat oven to 400°F.
- In a baking dish, mix peach slices with sugar and coconut oil. Roast for 15-20 minutes, turning the peach slices over halfway through baking. Once roasted, remove the peach slices from the oven, place them on a plate, and let them cool completely.
- Using the 1/4 lemon, trace the rim of 3 martini glasses and dip them in sanding sugar. Place into the refrigerator until ready to use.
- Add cooled, roasted peach slices and heavy whipping cream to a blender and blend until smooth.
- In a cocktail shaker, combine the blended peach mixture with the remaining ingredients and ice. Shake well and pour into chilled martini glasses.
- Garnish with a peach slice.
