Ingredients
- 4 medium avocados
- 1/2 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon dried Italian herbs
- 1 cup panko breadcrumbs
- 1/2 cup everything bagel seasoning
- 2 large eggs

Instructions
- Preheat air fryer to 400 degrees F.
- Line a small baking sheet or plate with wax paper and set it aside.
- Slice the avocados in half, lengthwise, and remove the pit. Carefully, peel the skin and slice each avocado half lengthwise into 1/2" thick slices.
- Add flour, black pepper, salt, smoked paprika, garlic powder, and Italian herbs to a bowl and stir with a fork. Set aside.
- In the second bowl, add 2 eggs, a splash of water, and whisk.
- In the third bowl, add the panko and the everything bagel seasoning, stir with a fork to combine.
- Take the avocado slices, one at a time, and toss in the flour mixture, then in the beaten eggs, then in the panko mixture. Set aside onto the prepared baking sheet and repeat with the remaining slices.
- Spray air fryer basket with nonstick spray and add the breaded avocado slices in a single layer, making sure they're not touching each other. Cook in batches.
- Lightly spray them with cooking spray, and cook for 4 minutes. Turn over avocado slices, spray with cooking spray again, then cook for another 2-3 minutes, or until golden and crispy.
