National Chickpea Day on April 21st is a Great Day to Make Some New Recipes 

I really like them as crispy falafel mixed with onions, garlic, herbs, and spices fried into little patties.

Also known as Garbanzo beans, these can also be added to a salad with other veggies and cheese.

Instant Pot Chickpeas

I love making chickpeas in the instant pot because it is so easy, and the results are incredible with just one ingredient and some seasonings. No stirring or watching involved. Then, make them into hummus or anything else.

Take those chickpeas and toss them in a bowl with tomatoes, cucumber, avocados, feta cheese, garlic, and green onions for a delicious salad dressed with my homemade red wine sauce. This is so decadent and delicious.

Air Fryer Ranch Chickpeas

Another way to enjoy fresh chickpeas is to pop them into the air fryer and make a healthy snack for the kids. With just some ranch seasoning and salt, you can have them snacking on these instead of those chips or fries. These taste much better and they are a lot cheaper too. 

This smooth and tangy nutty-flavored dip is perfect for any kind of dipping with a nice balance of garlic and fresh lemons. It is easy to make in just five minutes in a food processor and only takes four ingredients. I like to add extra spices but make it your way.

Smashed Chickpea Salad

Whether you use it as a salad or a spread, this is a delicious mixture of chickpeas, onions, avocados, herbs, and lemon juice. The creaminess of it makes it perfect for spreading on sandwiches or crackers but it is also good for eating like a salad. And it's healthy too so its a great snack.
