How to Celebrate Irish Food Day on March 17th

Irish Food Day, whether you are irish or not, is a great day to make some good Irish food. How about corned beef?

Other delicious Irish foods include colcannon, irish soda bread, lamb stew, and cabbage rolls.

Cabbage Hash Browns

Why not start with a plate stacked with cabbage hash browns to go with your eggs and bacon? These are crispy and perfectly seasoned with some savory sweet onions for a low carb breakfast that is hard to beat and easy to make. With just some eggs, cabbage, and herbs, you can make breakfast for the whole family.

Everyone's favorite traditional Irish dish on St. Patrick's Day, this corned beef and cabbage is done in a fraction of the time in the instant pot. And it tastes much better in my opinion too. In just over an hour, get this whole meal on the table.

Instant Pot Lamb Stew

Another traditional Irish dish, my lamb stew is made with tender lamb meat that melts in your mouth after cooking in the instant pot for less than an hour. It is the perfect meal for St. Patty's Day or Easter. My family likes it any time of the year really because it is so delicious.

This is what you need to dip in lamb stew or any other soup or stew. It is so easy to make without proofing or kneading and it only takes an hour to make. We have it several times a year, not just on the holidays. The crunchy crust and tender crumb are delightful.

Corned Beef Sandwiches

What do you do with your leftover corned beef? Besides making corned beef hash, I like to make corned beef sandwiches. I just get some toasted rye bread, add some swiss cheese, a little Russian or Thousand Island dressing, and a bit of pickle relish, and they are ready to go.
