  • 4 cups shredded zucchini
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt divided
  • 1/4 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian herbs
  • 2 eggs medium and at room temperature
  • 4 cloves garlic minced
  • 1/4 cup green onions diced
  • 2 tablespoons dill finely chopped
  • 1 teaspoon lemon zest


  • Add the shredded zucchini to a large colander and sprinkle with 1/2 teaspoon of salt. Let it sit for 15 minutes.
  • Next, squeeze all of the excess water out by pressing with your hands, and pat dry with a paper towel.
  • Place the drained zucchini in a large bowl and add the rest of the ingredients. Stir until well combined.
  • Preheat the Air fryer to 390 F. Add parchment paper to the bottom of the basket.
  • Take 2 tablespoon-size mounds of the mixture, form a fritter, slightly flatten it with your hand, and place it in the basket.
  • You may have to cook these in batches.
  • Air fry the fritters for 7 minutes per side, or until they're golden and crispy.
  • Add toppings, and serve warm with lemon and dipping sauce on the side.
