Ingredients

  • 4 medium avocados
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian herbs
  • 1 cup panko breadcrumbs
  • 1/2 cup everything bagel seasoning
  • 2 large eggs
  • cooking spray

Instructions

  • Preheat air fryer to 400 degrees F.
  • Line a small baking sheet or plate with wax paper and set it aside.
  • Slice the avocados in half, lengthwise, and remove the pit. Carefully, peel the skin and slice each avocado half lengthwise into 1/2" thick slices.
  • Add flour, black pepper, salt, smoked paprika, garlic powder, and Italian herbs to a bowl and stir with a fork. Set aside.
  • In the second bowl, add 2 eggs, a splash of water, and whisk.
  • In the third bowl, add the panko and the everything bagel seasoning, stir with a fork to combine.
  • Take the avocado slices, one at a time, and toss in the flour mixture, then in the beaten eggs, then in the panko mixture. Set aside onto the prepared baking sheet and repeat with the remaining slices.
  • Spray air fryer basket with nonstick spray and add the breaded avocado slices in a single layer, making sure they're not touching each other. Cook in batches.
  • Lightly spray them with cooking spray, and cook for 4 minutes. Turn over avocado slices, spray with cooking spray again, then cook for another 2-3 minutes, or until golden and crispy.
  • Serve with lemon slices and sauce for dipping.
