Line a baking sheet with wax paper and set it aside.
In a large bowl combine peanut butter, cereal, vanilla extract, and maple syrup, stir until fully combined.
Roll the mixture into 20 balls, about 2 tablespoons each.
Place onto the prepared baking sheet and freeze for 30 minutes.
Add chopped chocolate to a medium bowl and microwave on medium for 1 minute. Stir, then continue microwaving every 20 seconds and stirring again, until melted.
Dip and roll the balls in melted chocolate, place back onto the baking sheet and immediately sprinkle chopped peanuts on top.
Return to the freezer until the chocolate is set, about 15-30 minutes.
