Ingredients

  • 1 very large onion sliced thinly
  • 4 tablespoons butter
  • 12 slices bacon chopped
  • 1 green cabbage or savoy - cored and chopped
  • 2 tablespoons brown sugar optional
  • 1/2 cup chicken broth warm

Instructions

  • Place a large skillet over medium-high heat and add the butter. Once melted, add the onion and cook stirring for 2 mins, then add the bacon and cook for 5-6 mins more until golden.
  • Add the chopped cabbage and brown sugar, cook for 10 mins so it browns. Add salt and pepper to taste.
  • Lower heat to medium and add the broth, cook for 2 mins or until cabbage is slightly wilted. Cover, reduce the heat to low, and cook for another 5 mins.
  • Uncover and stir well, taste and adjust for salt and pepper. Increase the heat and cook for a few more minutes.
  • Serve garnished with parsley.
