Ingredients

  • 1 pound Polska kielbasa or smoked sausage - sliced into 1/4 inch slices
  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 4 cloves garlic minced
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 5 cups low sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 pound potatoes diced
  • 2 medium carrots sliced
  • 4 cups green cabbage chopped
  • 1 stalk celery sliced
  • Salt and Pepper to taste

Roux:

  • 1/3 cup butter
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • 1 cup half and half
  • 2 tablespoons fresh parsley chopped

Instructions

  1. Place a large soup pot or Dutch oven over medium heat, and add olive oil, once hot add the onion and cook stirring for 2-3 minutes.
  2. Add sausage, garlic, Italian seasoning, dried basil, and oregano, stir, and cook for 5 minutes.
  3. Add celery, carrot, diced potatoes, cabbage, chicken broth, Worcestershire sauce, salt, and pepper. Stir.
  4. Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the potatoes are tender.
  5. Place a small saucepan over medium heat and once hot add the butter. Melt it and stir in flour cook it for 1-2 minutes and little by little, while stirring, add milk and half and half. Whisk until smooth and bubbly.
  6. Add the cream mixture to the soup, stir, get a potato masher, and mash half of the veggies in the soup.
  7. If the soup, is too thick, add a little more broth. Allow simmering for 5 minutes.

  8. Remove from heat, sprinkle with parsley and serve.
