  • 2 lbs carrots peeled and sliced into 1/2 inch pieces
  • 1/4 cup unsalted butter melted
  • 1/3 cup brown sugar
  • 1 tablespoon balsamic reduction
  • 1 tablespoon soy sauce
  • 2 tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg


  • 1 tablespoon chopped parsley


  • Prepare and add the carrots to the slow cooker.
  • In a medium bowl, whisk together the melted butter with the rest of the ingredients.
  • Pour the sauce mixture on top of the carrots and toss to combine.
  • Cook on HIGH for 3 hours or until carrots are tender.
  • To thicken the glaze, remove uncovered on HIGH for an additional 20-25 minutes. Or mix 1 tablespoon of cornstarch with 3 tablespoons of water and add to the mixture, cook on HIGH for an additional 15 minutes.
  • Sprinkle with parsley and serve.
