  • 6 leftover everything bagels halved horizontally and cut into bite-sized pieces
  • 6 ounces cooked ham cut into small cubes
  • 8 slices cooked bacon crumbled into small pieces
  • 1 cup cherry tomatoes cut in half
  • 1 1/2 cup sharp cheddar cheese freshly grated
  • 1 cup mozzarella pearls cut in half
  • 8 large eggs
  • 2 1/2 cups milk
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped green onions
  • 8 ounces cream cheese


  • Coat a 9x13-inch casserole dish with baking spray.
  • Add the bagel pieces to the bottom of the dish, distribute it evenly. Follow with the ham and bacon over the top.
  • Sprinkle 1/2 cup of cheddar cheese on top.
  • In a large bowl, combine the eggs, milk, mustard, paprika, salt, and pepper until smooth.
  • Pour the egg mixture over the bagels, and lightly press down on the bagels.
  • Cut the cream cheese into small pieces, and arrange on top.
  • Also, arrange the mozzarella pearls and the cherry tomatoes on top.
  • Sprinkle the green onions and the remaining 1 cup of cheddar cheese.
  • Cover the casserole with plastic and refrigerate for 3 hours or overnight.
  • When ready to bake, remove the casserole from the refrigerator and let stand at room temperature while the oven preheats.
  • Preheat oven to 350 degrees F.
  • Cover the casserole with foil and bake, covered, for 40 minutes. Uncover, and bake until golden-brown, about 15-20 additional minutes.
  • Let stand at room temperature for 10 minutes. Slice and serve warm.
