Coat a 9x13-inch casserole dish with baking spray.
Add the bagel pieces to the bottom of the dish, distribute it evenly. Follow with the ham and bacon over the top.
Sprinkle 1/2 cup of cheddar cheese on top.
In a large bowl, combine the eggs, milk, mustard, paprika, salt, and pepper until smooth.
Pour the egg mixture over the bagels, and lightly press down on the bagels.
Cut the cream cheese into small pieces, and arrange on top.
Also, arrange the mozzarella pearls and the cherry tomatoes on top.
Sprinkle the green onions and the remaining 1 cup of cheddar cheese.
Cover the casserole with plastic and refrigerate for 3 hours or overnight.
When ready to bake, remove the casserole from the refrigerator and let stand at room temperature while the oven preheats.
Preheat oven to 350 degrees F.
Cover the casserole with foil and bake, covered, for 40 minutes. Uncover, and bake until golden-brown, about 15-20 additional minutes.
Let stand at room temperature for 10 minutes. Slice and serve warm.
