  • 1 3/4 cups sour cream or plain yogurt
  • 1/2 cup extra virgin olive oil
  • 1 1/2 cup sugar
  • 3 large eggs room temperature
  • 1 tablespoon orange zest
  • 2 tablespoons orange juice
  • 1 teaspoon orange extract
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • Preheat oven to 350 degrees F.
  • Butter a 9-inch springform pan by buttering the sides and bottom. Set aside.
  • In a medium bowl, stir together the flour, sea salt, baking powder, and baking soda.
  • In a large bowl whisk sugar with sour cream, eggs, olive oil, orange juice, orange zest, and orange extract until fully combined and creamy
  • Add half of the dry ingredients to the wet ingredients, mixing until fully combined. Add the rest and mix until no lumps and the batter is smooth.
  • Pour the batter into the prepared springform pan.
  • Place on the middle rack in the oven and bake for 50-60 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • If the cake starts to brown too quickly, cover it with foil.
  • Remove from oven and cool for 15 minutes in the pan, before removing it and cooling it completely before serving.
  • Serve with powdered sugar on top or whipped cream and fresh berries.
