Grilled Salmon Kebabs Ingredients:

  • 2 lbs salmon filet cut into 1 1/2" thick pieces
  • 1 pineapple cut into 1 1/2" thick pieces
  • 1 purple onion cut into 1" pieces
  • 2 lemons sliced

For the Fish Marinade:

  • 1/2 cup pineapple juice
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 4 cloves garlic minced
  • 1 teaspoon liquid smoke
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper


  • Add all marinade ingredients to a medium bowl and whisk to combine.
  • Place salmon pieces into a large mixing bowl and pour marinade over meat. Stir to combine, cover and refrigerate overnight, stirring once or twice while marinating. Allow marinating for at least 6-8 hours.
  • Skewer marinated salmon along with the sliced onion and pineapple, alternating them on the skewer.
  • Grill kebabs over med/high heat for about 8-10 min or until the desired doneness is reached, rotating every 2-3 min for even grilling.
  • Remove kebobs from the grill and let them rest at least 5 min before serving.
  • Garnish with parsley and serve with tartar sauce.
