These Grilled Chicken Skewers are super juicy made with marinated chicken breasts along with some colorful vegetables.

Ingredients

Grilled Chicken Kebab Ingredients:

  • 2 1/2 lbs chicken breasts cut into 1 1/2" thick pieces
  • 2 medium zucchini cut into thick rings
  • 1 red bell pepper cut into 1 1/2" thick pieces
  • 1 yellow bell pepper cut into 1 1/2" thick pieces
  • 1 purple onion quartered

For the Marinade:

  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 Tbsp Worcestershire sauce
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 4 cloves garlic minced
  • 1 teaspoon liquid smoke
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Add all marinade ingredients to a medium bowl and whisk to combine.
  • Place chopped chicken into a large mixing bowl and pour marinade over meat. Stir to combine, cover and refrigerate overnight, stirring once or twice. For best results, marinate for 8 hours or more.
  • Skewer marinated meat alternating with the sliced veggies.
  • Grill the kabobs over med/high heat for about 10 min, rotating every 2-3 min for even grilling.
  • Remove kebobs from the grill and let them rest at least 5 min before serving.
  • Garnish with parsley and serve.
