Cheesy Broccoli Casserole
Cheesy Broccoli Casserole is an easy side dish made with tender broccoli soaked in a creamy cheddar cheese sauce and topped with crackers.
Servings 6 servings
- 4 tablespoons butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon paprika
- 1 cup milk
- 1 cup cream
- 2 cups cheddar cheese shredded
- salt and pepper to taste
- 1/2 cup cheddar cheese shredded
- 1/2 cup buttery crackers crushed
- 2 tablespoons butter melted
Preheat oven to 375°F.
Combine topping ingredients in a bowl and set aside.
Bring a medium pot with water to a boil, add the broccoli, and cook until tender-crisp, about 4-5 minutes. Drain well.
Place a skillet over medium heat and melt butter, whisk in flour until smooth.
Add milk a little at a time until smooth, add paprika, add cream and continue cooking and whisking until thick and bubbly.
Remove from heat and stir in cheese. Season with salt and pepper to taste.
Place broccoli in a 2qt casserole dish. Top with cheese sauce and topping mixture.
Bake 20-30 minutes or until hot and bubbly.
Sprinkle with a bit of parsley and serve.
