Mini Pancakes or Silver Dollars
Mini Pancakes or silver dollars are a cute, bite-size breakfast option! Add it to your kid's lunchbox alongside his favorite toppings for a fun and hearty meal!
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoons white granulated sugar
- 1 1/4 cups milk whole
- 1 egg
- 3 tablespoons butter melted
- Orange slices
In a large bowl, sift together the flour, baking powder, salt, and sugar.
Make a well in the center and pour in the milk, egg and melted butter. Whisk by hand until smooth.
Heat a lightly oiled griddle or frying pan over medium-high heat.
Scoop the batter onto the griddle, about 1/4 cup for each pancake.
Brown on both sides for just a few minutes.
Serve hot or pack for later in a lunch box.
These also freeze well.
