Italian Tomato Bruschetta

Tomato Bruschetta is simple yet so festive that it will brighten up any meal! Its colors and flavors make it so appetizing and a great starter overall!

Ingredients

  • Sourdough or ciabatta bread sliced in 1/2 inch slices
  • 2 tablespoons olive oil
  • 2 cloves garlic minced

Tomato Topping:

  • 4 medium tomatoes firm and ripe (chopped / I remove the seeds and extra pulp)
  • 1 cup yellow cherry tomatoes
  • 1/2 red onion diced
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon each salt and pepper
  • 1 1/2 teaspoons dried oregano
  • 1/4 cup fresh basil leaves chopped
  • 1/4 cup olive oil very good quality

Garnish:

  • Balsamic reduction
  • Fresh basil

Instructions

Make the Bread:

  • Heat a grill pan or turn on the grill, and once hot lightly brush bread slices with olive oil and place on the grill or grill pan. Grill for about 2 minutes, or until toasted, turn and grill on the other side.
  • Remove from grill/grill pan and rub with minced garlic, and sprinkle with a little salt on top.

Tomato Topping:

  • In a medium bowl mix together all the Tomato Topping ingredients, serve over the freshly toasted bread, with a little drizzle of Balsamic vinegar and fresh basil leaves.
