  • 1 lb ground beef
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 tablespoon taco seasoning
  • 1 jalapeno diced
  • 8 large eggs
  • 1/3 cup half and half
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup American Cheese
  • 1 large tomato diced
  • 1 avocado diced
  • 1 cup refried beans
  • Hot sauce for serving


  • Place a large skillet over medium heat and once hot, cook ground beef, until no longer pink. Drain any excess fat.
  • Add onion, garlic, jalapeno, salt, pepper, and taco seasoning. Cook until the beef is browned.
  • In a medium bowl, whisk together eggs and half and half.
  • Wipeout the skillet, place over medium heat and melt the butter. When butter is just starting to foam, reduce heat to medium-low and add beaten eggs. Using a rubber spatula, stir every occasionally until soft curds form. Season with salt and pepper to taste.


  • In the center of each tortilla, spread ¼ cup of refried beans, add ¼ of the ground beef, ¼ of the scrambled eggs, ¼ cup of each cheese, and tomato pieces and avocado.
  • Fold in the two sides and roll up tightly. Serve with hot sauce.
