- 1 cup white sugar
- 1/2 cup unsalted butter softened to room temperature
- 1 egg
- 1/2 cup greek yogurt
- 3.4 box instant vanilla pudding mix
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups all-purpose flour
- 1 teaspoon mint extract
- 3 drops mint green gel food coloring optional
- 1 1/2 cups chocolate chips
Preheat oven to 375 degrees F.
Cover a large cookie sheet with parchment paper and set aside.
In a large bowl, using a hand mixer, cream together sugar and butter. Add egg, yogurt and pudding mix and mix until combined.
In a small bowl, combine flour, salt, and baking soda, whisk to combine.
Incorporate the flour mixture into the pudding mixture and mix until well combined, but do NOT overmix.
Add mint extract and food coloring until the desired color is achieved.
Fold in chocolate chips.
Use a two tablespoons cookie scoop to drop spoonfuls of the mixture onto the prepared baking sheet. leave about 3 inches space between each cookie.
Bake for 9-10 minutes, until slightly golden on the edges.
Remove from the oven and let the cookies cool on the baking sheet for 10 minutes, after which transfer to a cooling rack to fully cool.
