Ingredients

Soup:

  • 1 sweet onion finely diced
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 4 cups low-sodium vegetable broth plus more if needed
  • 6 cups diced sweet potatoes
  • 1/2 cup creamy almond butter
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon ground nutmeg
  • 1/3 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper optional
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground black pepper
  • 1 cup heavy cream

Toppings:

  • Chopped fresh cilantro
  • Chopped peanuts or pecans
  • Drizzle of cream
  • Drizzle of olive oil

Instructions

  • Wash and dice the sweet potatoes.
  • Next, add to the crockpot all of the ingredients except for the heavy cream and the toppings.
  • Cook on high for 4 hours, or on low and for 6 hours until the potatoes are fork-tender.
  • Then, using an immersion blender, mash and puree the soup until you get a creamy consistency.
  • Add the heavy cream and adjust the taste if needed. Cook for another 30 minutes.
  • Serve with the suggested toppings.
