2 cups all-purpose flour 2 teaspoons baking powder 1/2 tsp salt 10 tablespoons unsalted butter softened 1 cup + 2 tablespoons granulated sugar 1 large egg 1 large egg yolk 1/2 teaspoon vanilla extract 5 drops purple gel food coloring 5 drops green gel food coloring 5 drops orange gel food coloring 5 drops blue gel food coloring 1/2 cup powdered sugar
Preheat oven to 350 degrees F.
In a mixing bowl whisk together flour, baking powder, and salt.
In the bowl of an electric stand mixer fitted with the paddle attachment, whip together butter and sugar until pale and fluffy.
Add in the egg then the egg yolk and vanilla extract.
With mixer set on low speed, slowly add in dry ingredients and mix just until combined.
Divide batter into bowls for the number of colors you want.
Add food coloring to each individual bowl and mix until all combined.
Chill for 30 minutes.
Roll into balls and dip in a bowl of powdered sugar.
Place on a greased cookie sheet and pat down a bit.
Bake for 10-12 minutes.
Add candy eyeballs while cookies are still warm.
