Ingredients

Spinach:

  • 3 tablespoons butter
  • 16 ounces fresh baby spinach leaves washed and dried

Creamy Sauce:

  • 1/4 cup unsalted butter divided
  • 1 medium sweet onion diced
  • 4 cloves garlic minced
  • 4 tablespoons all-purpose flour
  • 1 1/4 cup heavy cream
  • 1/8 teaspoon ground nutmeg optional
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon ground black pepper or to taste

Garnish:

  • 4 tablespoons grated parmesan cheese

Instructions

Spinach:

  1. Melt butter in a small pan over medium heat, add spinach in batches, wilting each batch before adding the more. If the pan is too dry, add just a tablespoon of water.

Creamy Sauce:

  1. Place a medium saucepan over medium heat and add 1/4 cup butter. Once the butter has melted, whisk in the flour and cook for a couple of minutes until just lightly golden in color.
  2. Add the diced onion and cook until transparent, about 2-3 minutes. Add the garlic and cook for about 30 seconds.
  3. Slowly pour in 1 cup of cream, whisking constantly. Stir until the sauce thickens, for about 5 minutes.
  4. Add with salt, pepper, nutmeg, taste and adjust.
  5. If the sauce is too thick, add the remaining 1/4 cup of cream, whisking it in until reaching desired thickness for the sauce.
  6. Add wilted spinach to the sauce, and stir gently to combine.
  7. Sprinkle with parmesan cheese before serving.
