Place a medium saucepan over medium heat and add 1/4 cup butter. Once the butter has melted, whisk in the flour and cook for a couple of minutes until just lightly golden in color.

Add the diced onion and cook until transparent, about 2-3 minutes. Add the garlic and cook for about 30 seconds.

Slowly pour in 1 cup of cream, whisking constantly. Stir until the sauce thickens, for about 5 minutes.

Add with salt, pepper, nutmeg, taste and adjust.

If the sauce is too thick, add the remaining 1/4 cup of cream, whisking it in until reaching desired thickness for the sauce.

Add wilted spinach to the sauce, and stir gently to combine.

Sprinkle with parmesan cheese before serving.
