Cranberry Relish is the perfect pair for your roasted turkey this Thanksgiving! It is healthful, refreshing, and so easy to make with this recipe!
Servings 8 servings
- 12 ounces bag cranberries fresh or frozen
- 1 1/2 cup sugar divided
- 1 orange zested and juiced
- 1 teaspoon lemon zest
- 1 green apple finely chopped
- 1/2 cup walnuts or pecans - toasted and finely chopped
Add the cranberries to a medium saucepan, except 1/2 cup, that you should set aside in a small bowl.
Over low heat add the 1 cup sugar, orange zest, orange juice, and lemon zest to the saucepan, and cook, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes.
Increase the heat to medium and cook until the cranberries burst, about 12 minutes.
Reduce the heat to low again and stir in the reserved ½ cup of cranberries. Add salt and pepper to taste.
Roughly chop the apple with 1/2 cup sugar in a food processor.
Fold into the cranberry sauce along with 1/2 cup chopped toasted walnuts.
Let cool to room temperature before serving.
