  • 12 ounces bag cranberries fresh or frozen
  • 1 1/2 cup sugar divided
  • 1 orange zested and juiced
  • 1 teaspoon lemon zest
  • 1 green apple finely chopped
  • 1/2 cup walnuts or pecans - toasted and finely chopped

  • Add the cranberries to a medium saucepan, except 1/2 cup, that you should set aside in a small bowl.
  • Over low heat add the 1 cup sugar, orange zest, orange juice, and lemon zest to the saucepan, and cook, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes.
  • Increase the heat to medium and cook until the cranberries burst, about 12 minutes.
  • Reduce the heat to low again and stir in the reserved ½ cup of cranberries. Add salt and pepper to taste.
  • Roughly chop the apple with 1/2 cup sugar in a food processor.
  • Fold into the cranberry sauce along with 1/2 cup chopped toasted walnuts.
  • Let cool to room temperature before serving.
