  • 2 lbs cod fillets cut into 1-inch strips
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 eggs
  • 1 cup bread crumbs
  • 1 cup panko bread crumbs
  • Cooking spray


  • Preheat oven to 400 degrees F.
  • Line a baking sheet with parchment paper or spray with cooking spray.
  • In a shallow dish or pie pan, whisk together the flour, salt and pepper, paprika, garlic powder, and onion powder.
  • In another shallow dish, beat the eggs lightly.
  • In a third dish, whisk together the regular breadcrumbs and panko bread crumbs.
  • Dip each piece of fish in the flour mixture, then in the egg mixture, then in the bread crumbs, and place onto the prepared baking sheet.
  • Spray each of the strips lightly with cooking spray. Bake for 20-25 minutes, or until golden brown and cooked through. Enjoy!
  • Serve with your favorite sauce.
