Grilled Potatoes Recipe

Ingredients

  • 5-6 large Idaho or russet potatoes cut into wedges

Marinade:

  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh parsley chopped

Instructions

  1. Bring a large pot with water over high heat, bring to a boil and add about 1 teaspoon of salt, stir to dissolve.
  2. Add the potatoes and cook until al dente, about 10 minutes, don't overcook. Drain and let cool slightly.
  3. Heat grill to medium-high and oil grates. Or just place a grill pan over medium-high heat and lightly oil the pan.
  4. In a large bowl, mix together all the marinade ingredients except parsley.
  5. Add potatoes and toss gently to coat.
  6. Grill potatoes, flipping once, until golden brown, about 5 minutes per side.
  7. Add parsley to the remaining oil mixture, then return grilled potatoes to the mixture and toss again to combine.
  8. Serve immediately.
