Coconut Rice Recipe
Coconut Rice is a famous Asian side dish bursting with rich coconut flavor. It is a very delicious and a nice upgrade to regular plain rice that you just have to try!
Servings 4 servings
- 2 cups jasmine rice
- 1 can coconut milk
- 1 1/2 cups of water
- 1 tablespoon canola oil
- 1/4 teaspoon salt or to taste
- 1 tablespoon granulated sugar optional
- 1/2 teaspoon coconut extract
- 1 tablespoon fresh cilantro chopped
- Shredded coconut
Rinse the jasmine rice several times until the water runs clear drain well of any excess water. Transfer to a medium pot.
Add the coconut milk, water, oil, coconut extract, salt, and sugar.
On high heat, bring the mixture to a boil. Once it starts to boil, turn the heat down to low, cover with a lid and cook covered for 20 minutes.
Uncover and continue to cook for another 5 minutes.
Once done, cover and let stand for 10 minutes.
Fluff it up with two forks and serve.
Garnish with some chopped cilantro and shredded coconut.
