  • 2 cups basmati rice unrinsed
  • 3 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil divided
  • 3 tablespoons finely chopped cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest


  • Chopped cilantro


  1. In a small heavy pot, add rice, water, 1 tablespoon oil and salt.
  2. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce heat to low and cover with a lid for about 15 minutes.
  3. Turn off heat and let the rice sit COVERED with the lid on for an additional 5-10 minutes. Do NOT uncover immediately, as the rice is still cooking.
  4. In a medium bowl, combine chopped cilantro, lime juice, lemon juice, lime zest, rice and remaining 1 tablespoon of oil and toss until completely mixed.
  5. Serve as is or topped with cilantro and Chipotle Black Beans.
