Mexican Chicken Tostadas

Chicken Tostadas are a crunchy Mexican dish that is a great party pleaser. This easy and delicious recipe is made with shredded chicken, beans, avocado, and a creamy, homemade chipotle sauce.

Ingredients

  • 8 corn or flour tortillas small or medium
  • Cooking spray

Chicken:

  • 3 cups shredded chicken meat
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • juice of 1 lime

Chipotle Sauce:

  • 1 cup mayonnaise
  • 2 tablespoons lime juice
  • 3-4 canned chipotle chiles in adobo sauce roughly chopped
  • 2 cloves garlic minced

Toppings:

  • 2 cups lettuce shredded
  • 15 oz can black beans drained & rinsed
  • 4 cherry tomatoes diced
  • 2 avocados diced
  • 1/4 cup radishes cut into rounds
  • Lime juice of
  • 1/4 cup cilantro finely chopped
  • 1/2 cup Cotija cheese or feta

Instructions

Make Tostada Shells:

  1. Preheat oven to 400 degrees F.
  2. Line two large baking sheets with parchment paper and spray it with cooking spray. Arrange tortillas in a single layer and spray with cooking spray on top, if desired, sprinkle some sea salt on top.
  3. Bake for 6 minutes per each side, or until golden brown and crispy.
  4. Prepare the Chicken:
  5. In the meantime, place shredded chicken in a medium bowl, add cumin, chili powder, lime juice and toss to combine.

Chipotle Sauce:

  1. Combine all the ingredients in a small bowl. Taste and adjust for spiciness, if you want the sauce spicier add a few tablespoons of the above sauce from the can.

Assemble:

  1. Top each tostada shell with creamy chipotle sauce, chicken, shredded lettuce, beans, tomatoes, diced avocado, sliced radish, and cotija cheese.
  2. Squeeze some lime juice on top and sprinkle with chopped cilantro.
  3. Serve immediately.
