Place a cast iron skillet over medium heat. Add oil and once hot, add onion, cook stirring for 1 minute.
Add garlic, stir and cook for another 30 seconds.
Add spinach, stir and cook until wilted. Season with salt and pepper.
Transfer mixture to a large bowl and set aside the pan.
To the same bowl add cream cheese, sour cream, mayo, mozzarella, Parmesan, pepper flakes and Italian seasoning. Taste and adjust for salt and pepper.
Using a sharp knife, cut pockets in the thickest part of the pork chops, not all the way through.
Stuff with the spinach and cheese mixture.
Place the cast iron pan back on the stove, add 2 tablespoons of olive oil and heat over medium heat.
Once hot, add pork chops and cook 4-6 minutes per side or until golden and cooked through. Cook in batches, two at a time.
Serve over mashed potatoes.
