  • 32 ounces frozen peas thawed
  • 2 cans sweet corn drained
  • 1 small red onion chopped
  • 4 garlic cloves minced
  • 8 bacon strips cooked until crispy and chopped
  • 8 ounces cheddar cheese cut into small cubes
  • 1 cup blue cheese crumbled


  • 1/2 cup mayo
  • 1/2 cup sour cream
  • Salt and pepper to taste


  • More blue cheese
  • More chopped cooked bacon
  • Green onions


  • Drain thawed sweet peas of excess water. Drain the sweet corn.
  • Add to a large salad bowl. Add chopped onion, minced garlic, cooked bacon, diced cheddar cheese and 2/3 of the blue cheese.
  • Mix dressing ingredients in a bowl until combined. Add to salad and toss to combine.
  • Refrigerate for 2-4 hours before serving.
  • Top with the remaining crumbled blue cheese, green onions, and more bacon bits.
  • Store in the fridge for up to 3 days. Always serve chilled.
