Instant Pot Steamed Artichokes

Pressure Cook:

  • 3 medium artichokes
  • 1 cup chicken broth or water
  • 1 teaspoon garlic powder


  • 4 cloves garlic minced
  • 1/4 cup unsalted butter melted
  • 1 tablespoon lemon juice
  • Salt and ground black pepper to taste


  • Chopped parsley
  • Fresh lemon


  • Add artichokes to a large bowl and cover with cold water, let them sit for 5-10 minutes.
  • Remove from water, and cut stem off, also, trim the tip by about 1 inch. Remove any brown or wilted leaves.
  • Add broth and garlic powder to the Instant Pot and stir. Add a trivet or steamer rack and arrange the whole artichokes onto the trivet, tip part up.
  • Lock lid and point valve to sealed.
  • Cook on High Pressure for 8 minutes followed by a Quick Release.
  • Open the lid carefully and remove artichokes to a cutting board, slice in half if desired.
  • In a medium bowl, combine all the Sauce ingredients and stir together.
  • Squeeze half a lemon over the artichokes, sprinkle some salt and pour the sauce on top or serve it on the side. Garnish with fresh parsley before serving.
