Instant Pot Steamed Artichokes
Instant Pot Steamed Artichokes recipe is fast and super easy to make in your pressure cooker. In less than 30 minutes, you will have a delicious superfood, which is high in antioxidants and dietary fiber.

Pressure Cook: 3 medium artichokes 1 cup chicken broth or water 1 teaspoon garlic powder Sauce: 4 cloves garlic minced 1/4 cup unsalted butter melted 1 tablespoon lemon juice Salt and ground black pepper to taste Garnish: Chopped parsley Fresh lemon
Add artichokes to a large bowl and cover with cold water, let them sit for 5-10 minutes.
Remove from water, and cut stem off, also, trim the tip by about 1 inch. Remove any brown or wilted leaves.
Add broth and garlic powder to the Instant Pot and stir. Add a trivet or steamer rack and arrange the whole artichokes onto the trivet, tip part up.
Lock lid and point valve to sealed.
Cook on High Pressure for 8 minutes followed by a Quick Release.
Open the lid carefully and remove artichokes to a cutting board, slice in half if desired.
In a medium bowl, combine all the Sauce ingredients and stir together.
Squeeze half a lemon over the artichokes, sprinkle some salt and pour the sauce on top or serve it on the side. Garnish with fresh parsley before serving.
