Keto Pancakes - Low Carb
Keto Pancakes are gluten-free, low carb, sugar-free and perfect if you are trying to watch your carbs or follow a Keto diet. Made with just 7 ingredients!
Servings 10 pancakes
- 4 large eggs room temperature
- 4 ounces cream cheese softened to room temperature
- 6 tablespoons coconut flour
- 4 tablespoons whole milk
- 2 tablespoons Erythritol
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest optional
- 1 scoop low carb protein powder optional
Add all the ingredients to a blender and mix until fully combined and smooth. Scrape the sides of the blender with a spatula and repeat.
Heat up a griddle or place a non stick pan over high heat. Spray with non-stick oil or melt a 2 tablespoons of butter.
Use an ice-cream scoop to spoon the batter into same size pancakes and add to the pan. Cook in batches, 2 minutes per side, or until golden brown.
Stack and top with butter, sugar-free syrup and berries.
