  • 8 slices stale brioche bread cut into 1 inch thick slices
  • 2 tablespoons butter unsalted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1 cup cream
  • 1 teaspoon vanilla extract

  • In a large bowl, whisk together: sugar, cinnamon, nutmeg, eggs, cream and vanilla extract. Whisk until the ingredients are well combined and the mixture is smooth.
  • Transfer the sauce to a baking dish, and arrange the bread pieces in to soak. Soak for about 2 minutes on each side, the bread should absorb most of the batter, but it shouldn't be soggy all the way through.
  • Preheat the griddle or place a large, non-stick skillet over medium-high heat. Add butter to the skillet and melt it.
  • Add the soaked bread slices and cook for 2 to 3 minutes on the first side, or until it's golden brown. Turn and cook the second side until golden brown, about 2 minutes.
  • Serve topped with butter, and drizzle with maple syrup with berries and whipped cream on the side.
