  • 1 lemon juiced
  • 1/4 cup tahini well-stirred
  • 2 cloves garlic
  • 2 tablespoons extra-virgin olive oil plus more for serving
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper optional
  • salt to taste
  • 2 tablespoons water or more if needed

For Serving:

  • Ground paprika
  • Olive Oil

  • Open a can of chickpeas and add them to a colander. Rinse under cold water and drain.
  • Add all the ingredients, except water, to a 4 cup food processor. Process until the mixture is smooth and creamy, for about 1 minute.

  • Serve with fresh crunchy veggies, pita bread or pita chips.
  • Store in the refrigerator covered with plastic wrap or in a container with the lid on. Stir before serving.
