Pineapple Crisp is made with a deliciously sweet and tender pineapple base topped with a brown sugar crumble that makes it the perfect summer dessert.

- 2 cans (20 ounces each) crushed pineapple well-drained
- 1/2 cup unsalted butter melted
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 lime juiced
- 1/2 teaspoon lime zest
- 1 teaspoon coconut extract
Preheat the oven to 350 degrees F.
Spread the pineapple on the bottom of a 9x9 inch square baking dish.
In a medium bowl mix together all the topping ingredients until smooth.
Spoon the mixture evenly over the pineapple.
After that, pour the melted butter on top and sprinkle with cinnamon and nutmeg.
Bake for 40 to 45 minutes until pineapple is tender and the topping is golden brown.
Serve hot or cold.
