Ingredients

  • 2 cans (20 ounces each) crushed pineapple well-drained
  • 1/2 cup unsalted butter melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Topping:

  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 lime juiced
  • 1/2 teaspoon lime zest
  • 1 teaspoon coconut extract

Instructions

  • Preheat the oven to 350 degrees F.
  • Spread the pineapple on the bottom of a 9x9 inch square baking dish.
  • In a medium bowl mix together all the topping ingredients until smooth.
  • Spoon the mixture evenly over the pineapple.
  • After that, pour the melted butter on top and sprinkle with cinnamon and nutmeg.
  • Bake for 40 to 45 minutes until pineapple is tender and the topping is golden brown.
  • Serve hot or cold.
