Ingredients

  • 5-6 medium Russet potatoes
  • 2 cups elbow pasta cooked
  • 2 cups cheddar cheese cut into 1 inch cubes
  • 1 cup bacon bits or crumbles
  • 4 green onions chopped
  • 1 tablespoon chives chopped
  • 2-3 cup Ranch or Blue Cheese salad dressing more if needed
  • Garnish:
  • 1 tablespoon chives chopped
  • 2 green onions the green part only, also chopped

Instructions

  1. Preheat oven to 300 degrees F.
  2. Wash and scrub the potatoes clean, but do not peel. Pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
  3. Place the potato in the preheated oven, and bake for 80-90 minutes, or until slightly soft and golden brown.
  4. Remove potatoes from oven and let them completely cool.
  5. Cut the potatoes into halves and after that into 1 inch cubes.
  6. Add cooked pasta, potatoes, cubed cheese, chopped green onions, bacon and chives to a large bowl.
  7. Add salad dressing and gently stir to combine. Add more if needed.
  8. Garnish with green onions, chives and extra bacon if you have more on hand.
  9. Serve and enjoy!
