Ingredients

  • 2 cups blueberries
  • 4 cups raspberries
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/2 lemon

Crisp Topping:

  • 1 cup rolled oats
  • 2/3 cup all-purpose flour
  • 1/2 cup blanched slivered almonds
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 tablespoon cinnamon optional
  • Pinch of salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • Vanilla ice cream for serving

Instructions

Prepare the crisp topping:

  1. In a large bowl combine: oats, flour, both sugars, almonds, cinnamon and salt. Add the melted butter and using a fork mix everything until well combined, until topping resembles coarse meal. Chill in the refrigerator for 30 mins - 1 hour.
  2. Preheat the oven to 350°F.
  3. Butter a 9-inch pie plate or a 9-inch cast iron skillet and set aside.
  4. Add the berries to the prepared pan, sprinkle with sugar and cornstarch and gently stir to combine. Squeeze the lemon juice onto the berries and gently stir.
  5. Using your fingers, crumble the chilled crisp topping and sprinkle it evenly over the berries.
  6. Bake it in the center of the oven until the fruit is bubbling and the topping is golden brown, about 50 minutes to 1 hour.
  7. Remove the crisp to a rack to cool slightly.
  8. Serve warm with vanilla ice cream.
