Fruit Mojitos are so easy to make, they are also pretty and refreshing, the perfect summer drink. Check them here in four flavors.
Add raspberries, lemon juice, sugar or simple syrup and mint leaves to a tall glass. Muddle to combine. If you want it without seeds, you can strain it.
Add ice, rum and soda. Stir with a spoon to combine.
Optional: add a few ounces of pineapple juice, for a more pronounced tropical flavor.
Garnish with mint leaves and lime or lemon wedges.
In a small baking dish combine blackberries, sugar and 2 tablespoon lemon juice. Stir to combine. Roast in the preheated oven for 10-15 minutes. Remove from oven and let cool to room temperature.
Add roasted blackberries, lemon juice and mint leaves to a tall glass. Muddle to combine. If you want it without seeds, you can strain it.
Fill a tall glass 1/3 with the blended watermelon, use a mesh strainer when pouring it into the glass. Add mint leaves and lemon juice, muddle to combine. Add ice and fill the glass 1/3 more with blended watermelon juice. Add rum and soda and stir to combine.
Originally mojitos are made with lime juice. I love my mojitos with lemon juice instead of lime, but feel free to substitute.
