  • 2 chicken breasts skinless and boneless - cut into 1-inch chunks
  • 1 pound andouille sausage sliced
  • 20 ounces can diced tomatoes
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 red bell pepper finely chopped
  • 3 stalks celery thinly sliced
  • 1 1/2 cups chicken broth low sodium
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon dried oregano
  • 2 tablespoons Creole seasoning
  • 1 pound shrimp thawed, peeled, and deveined


  1. Add all the ingredients, except the shrimp, to the slow cooker and stir to combine.
  2. Cook on low for 7-8 hours or on high for 3-4 hours. Before the last 20 minutes of cooking, stir in the shrimp.
  3. Serve over rice garnished with fresh chopped parsley.
