Peanut Butter Filling:

  • 1 1/2 cups creamy peanut butter
  • 1 cup confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 4 tablespoons milk


  • 10 tablespoons unsalted butter
  • 8 ounces semisweet baking chocolate chopped
  • 1 cup white granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder sifted
  • 1/4 teaspoon fine salt


Peanut Butter Filling:

  1. In a medium bowl using a hand mixer fitted with the paddle attachment, beat the peanut butter, confectioners’ sugar, vanilla, and milk together on medium-high speed until combined. The mixture will be very thick, almost like cookie dough. Set aside.
  2. Spread it on parchment paper in a 9x9 inches layer and freeze for 15-20 minutes, while working on the brownies.


  1. Preheat oven to 350 degrees F.
  2. Line a square 9x9 pan with parchment paper, leaving an overhang on the sides.
  3. In a large microwave-safe bowl combine butter and chocolate. Microwave in 30-second intervals, stirring between each one until the mixture is melted and smooth.
  4. Add the sugar to the hot butter mixture and whisk vigorously until combined. Allow cooling until just barely warm.
  5. Add in eggs, yolk, and vanilla extract and whisk very well combined.
  6. Use a rubber spatula to stir in flour, cocoa powder, and salt until just combined.
  7. Pour half of the batter into the prepared pan and smooth out.
  8. Add the peanut butter mixture on top, distributing evenly and top with the remaining brownie batter.

  9. Bake in the preheated oven for about 20-25 minutes, or until cooked through but still slightly gooey in the center.
  10. Let the brownies cool in the pan for 30 minutes.
  11. Remove from pan and allow to cool to room temperature before slicing and serving.
