Ingredients

  • 1 1/2 cups cornmeal
  • 1 1/2 cups milk
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup honey
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup vegetable oil

Instructions

  1. Preheat oven to 400 degrees F, for a glass baking pan, preheat oven to 375 degrees F.
  2. Grease a 9x13 baking pan with butter or baking spray and set aside.
  3. Combine cornmeal, milk, and buttermilk in a small bowl and allow to rest 10 minutes.
  4. In a large bowl, combine flour, baking powder, baking soda, salt, and sugar, whisk to combine.
  5. Mix in the cornmeal mixture, eggs, honey, and oil until smooth. Combine with the flour mixture. Pour mixture into the prepared pan.
  6. Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean.
