Ingredients

  • 2 red bell peppers cut into 1" chunks
  • 2 orange bell peppers cut into 1" chunks
  • 2 yellow bell peppers cut into 1" chunks
  • 4 carrots cut into 1/2" thick circles
  • 2 zucchini cut into 1/2" thick circles
  • 1 red onion cut into 1/2" thick slices
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil

Instructions

  1. Preheat oven to 400 degrees F.
  2. Prepare the veggies by cleaning and cutting them.
  3. In a large bowl add 1/2 tablespoon of oil and gently toss red bell pepper, then arrange them in a single layer onto a large cookie sheet. Do the same for every veggie, in the order of the rainbow.
  4. Sprinkle with Kosher salt and black pepper.
  5. Roast for 20-25 minutes or until the veggies just start to brown and the carrots are fork-tender.
  6. Serve and enjoy!
