Ingredients

  • 1/4 cup milk
  • 1/4 cup oil
  • 2 eggs room temperature
  • 1/2 cup maple syrup
  • 1 cup sweet potato puree
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1/2 cup chopped walnuts
  • 1 cup chocolate chunks or chocolate chips

Cinnamon Glaze:

  • 1 cup confectioners' sugar
  • 2 tablespoons milk or more
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees Butter a 9x5 loaf pan and cover the bottom and the two long sides with parchment paper for easy bread removal.
  2. In a large bowl whisk together oil, brown sugar, sweet potato puree, maple syrup, eggs, milk, and vanilla until well blended.
  3. In another bowl whisk together the dry ingredients: flour, baking powder, salt, ginger, nutmeg, cloves, and cinnamon.
  4. Stir in the dry ingredients into the wet, just until combined.
  5. Stir in the chopped walnuts and chocolate.
  6. Transfer the batter into the prepared loaf pan and shake to distribute evenly.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool 10-15 minutes in the pan before removing the bread and placing it on a cooling rack.
  9. Cool the bread completely before adding the glaze.

Glaze:

  1. In a medium bowl, whisk together confectioners' sugar and cinnamon.
  2. Add milk and stir until no lumps remain and the mixture is smooth. The mixture should be thick enough to coat the back of a spoon but still, maintain a drizzle consistency.
  3. If needed, add another teaspoon of milk, or more sugar.
  4. Drizzle glaze over the cooled bread, let it settle before slicing and serving.
  5. Store covered at room temperature for up to 3-4 days.
