Bacon Cheeseburger Meatloaf

Ingredients

Meatloaf:

  • 2 lbs ground beef
  • 8 bacon slices cooked and chopped
  • 1 teaspoon dried parsley
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon Worcestershire sauce
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon Kosher salt
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 cup plain bread crumbs
  • 1/2 cup milk
  • 3 eggs beaten
  • 1 ½ cups cheddar cheese cut into small cubes

Meatloaf Glaze:

  • 1/2 cup ketchup
  • 1 tablespoon tomato paste
  • 3 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar
  • 5 bacon slices cooked and chopped

Meatloaf Toppings:

  • Pickles
  • Diced tomatoes
  • Lettuce

Instructions

  1. Preheat oven to 400 degrees F.
  2. Cover a rimmed baking sheet with aluminum foil and lightly spray with oil. Set aside.
  3. Make Meatloaf:
  4. Combine all the "Meatloaf" ingredients, up to the bread crumbs, including them as well. Stir well to combine, and after that add the milk and beaten egg. Stir just until combined.
  5. Add the cheddar cheese and again mix well, but do not over-beat.
  6. Shape the beef mixture into a loaf shape and place it on the prepared baking sheet.

  7. Meatloaf Glaze:
  8. Combine all the Glaze ingredients (except bacon a small bowl until well combined and set aside. Brush about half of the glaze all over the meatloaf.

  9. Bake:
  10. Transfer meatloaf to the oven and bake for about 45 minutes, or until the inside temperature is 160F degrees.
  11. Brush the remaining glaze all over the surface, sprinkle with bacon and bake for another 15 minutes.
  12. Once the meatloaf is done, let it cool for 10-15 minutes before slicing and serving.
