Ingredients

  • 6 cups arugula washed and dried
  • 1 cup strawberries sliced
  • 1 avocado sliced or cut into chunks
  • 2 cups cherry tomatoes cut in half
  • 1/4 cup pine nuts
  • 1/3 cup parmesan cheese shreds

Dressing:

  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon grape vinegar
  • 1/2 lemon juiced
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1/4 teaspoon oregano
  • Salt and freshly ground black pepper

Instructions

  1. Add Dressing ingredients to a small bowl or measuring cup, whisk with a fork to combine.
  2. Combine all salad ingredients, except cheese, in a large bowl, add dressing, toss to combine, top with parmesan shreds and serve.
