  • 1 1/4 cups white rice uncooked and rinsed
  • 5 cups water
  • 3 cinnamon sticks
  • 1/4 teaspoon ground cinnamon plus more for garnish
  • 1 cup unsweetened milk any milk of your choice will work
  • 1/3 cup pure maple syrup plus more to taste
  • 2 tablespoons brown sugar optional
  • 1 1/4 tsp pure vanilla extract
  • Ice cubes


  1. Using a rice colander, wash and drain the rice.
  2. Add rice to a large bowl with cinnamon sticks and 5 cups of water. Cover with plastic wrap and soak overnight in the refrigerator or for at least 8-10 hours.
  3. After the rice has soaked, discard the cinnamon sticks and transfer the rice and water mixture into a blender.
  4. Add 1/4 teaspoon cinnamon and brown sugar (if using) and blend on low for 3-5 minutes until well blended and smooth.
  5. Place a fine-mesh sieve over a medium bowl and pour the rice mixture through it two times. Finally, pour the mixture one more time through a cheesecloth.
  6. Transfer the strained mixture into a pitcher, add milk, pure maple syrup, and vanilla, stir well to combine. Taste and add more maple syrup if needed.
  7. To serve, pour over ice and garnish with ground cinnamon on top.
