Ingredients

  • 2 cups jasmine rice
  • 1 can coconut milk
  • 1 1/2 cups of water
  • 1 tablespoon canola oil
  • 1/4 teaspoon salt or to taste
  • 1 tablespoon granulated sugar optional
  • 1/2 teaspoon coconut extract

Garnish:

  • 1 tablespoon fresh cilantro chopped
  • Shredded coconut

Instructions

  1. Rinse the jasmine rice several times until the water runs clear drain well of any excess water. Transfer to a medium pot.
  2. Add the coconut milk, water, oil, coconut extract, salt, and sugar.
  3. On high heat, bring the mixture to a boil. Once it starts to boil, turn the heat down to low, cover with a lid and cook covered for 20 minutes.
  4. Uncover and continue to cook for another 5 minutes.
  5. Once done, cover and let stand for 10 minutes.
  6. Fluff it up with two forks and serve.
  7. Garnish with some chopped cilantro and shredded coconut.
