Ingredients

  • 3 Eggs lightly beaten
  • 1/2 cup Almond milk or any other dairy-free unsweetened milk
  • 1 medium Banana
  • 4 tablespoons Sugar-free syrup like Monk fruit syrup
  • 1 1/2 cups Rolled oats use GF if preferred
  • 1/4 cup Almond flour
  • 1/4 cup Protein powder of choice
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract

Pancake Toppings:

  • Fresh Berries
  • Monk fruit syrup
  • Sugar-Free Chocolate Chips
  • Fresh Banana Slices

Instructions

  1. Add all the ingredients to a blender, except the eggs. Process until smooth. Taste and adjust for sweetness.
  2. Pour mixture into a bowl, and whisk in the beaten eggs.
  3. Let the batter stand for about 10-20 minutes for the oats to soak in more liquid.
  4. Heat a large non-stick skillet over medium heat. Once warmed, spray with non-stick cooking spray or add 1 tablespoon of coconut oil and melt it.
  5. Using an ice cream scoop, pour pancake batter into the hot skillet. Cook about 2 pancakes per batch as the batter is a bit runny and will expand ones added to the skillet.
  6. Cook for 2-3 minutes on one side. Turn over and cook for another 1-2 minutes.
  7. Stack on a plate and drizzle with syrup and toppings of choice.
