1/2medium red onionthinly sliced
1/2cupshredded carrotabout 1 small carrot
1/2cuppine nutsor almond slices, toasted
zest of 1 lemon
In a large bowl combine all the "Salad" ingredients.
In a medium bowl, add all the "Dressing" ingredients and stir to combine.
Add dressing to the salad bowl and toss until fully combined.
Serve cold and refrigerate any leftovers.
