Ingredients

Batman Shapes:

  • 2 3/4 cups all-purpose flour
  • 1 1/2 cups white granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2/3 cups canola oil
  • 1 cup almond milk
  • 1 ripe banana mashed
  • black gel food coloring

Sprinkle Batter:

  • 2 3/4 cups all-purpose flour
  • 1 cup white granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2/3 cups canola oil
  • 1 cup almond milk
  • 1 ripe banana mashed
  • 1 cup rainbow sprinkles - optional

Glaze - Optional

  • 1 cup powdered sugar
  • 2-3 tablespoons almond milk
  • Sprinkles

Instructions

  1. Preheat oven to 350F.
  2. Lay the bottom of 12x9 inches baking pan with parchment paper and spray with baking spray. Set aside.
  3. In the bowl of an electric mixer whisk on low flour, sugar, salt and baking powder until combined. If using cocoa powder instead of food coloring, add it now. With the mixer on low medium speed, add the almond milk and oil, mix until combined. Add the mashed banana and black gel food coloring until you get the shade of black you want and whisk until all combined.
  4. Transfer batter to the pan and bake for 30-35 minutes or until a cake tester inserted into the middle of the cake comes out clean. Rotate the pan mid baking to ensure uniform baking.
  5. Remove cake from oven; let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  6. Once the cake has completely cooled, using a Batman cookie cutter, carefully and gentle cut Batman shapes. Set them on a cutting board topped with parchment paper and transfer them to the freezer for 30-40 minutes. This will help maintain the Batman shapes during the double baking process.

Sprinkle Batter:

  1. Preheat oven to 350F.
  2. Spray a 9x5 inches loaf pan with baking spray. Set aside.
  3. In the bowl of an electric mixer whisk on low flour, sugar, salt and baking powder until combined. If using cocoa powder instead of food coloring, add it now. With the mixer on low medium speed, add the almond milk and oil, mix until combined. Add the mashed banana and whisk until all combined. Fold in the sprinkles.
  4. Transfer 1/3 of the batter to the loaf pan, top with the Batman shapes, and starting 1 inch away from the loaf wall. Stack the Batman shapes one after each other; you need to leave 1 inch room for the loaf pan at the start and end. Pour the rest of the batter over the Batman shapes.
  5. Bake for 40 - 45 minutes or until a cake tester inserted into the cake comes out clean. I usually test at the beginning and end of the cake where there is little space with no Batman shape. The cake must be golden brown.
  6. Remove cake from oven; let it cool in the pan for 10 - 15 minutes before transferring to a wire rack to cool completely.
  7. Once the cake has cooled, work on the glaze. Combine powdered sugar with 1 tablespoon of almond milk at a time until no lumps are visible. If the mixture is too thick add a little more milk until the right, pourable consistency has been achieved. Poor the glaze over the cake and top with sprinkles. Let the glaze settle, slice the cake and serve.
